Taupo Roasted Red Pepper Soup
Red peppers grown in Taupo are roasted to release their sweetness and flavour and combined with onion, tomato, potato, kumara, celery, crumbled feta and lemon zest to make this delicious soup.

Crumble a little feta cheese and freshly cracked pepper over soup, serve with sliced and buttered sourdough bread.
